Long Time No See..Well I am back with Burcu’s Vegan Poğaça ..

Before the Recipe

Waov, what a time.. And how long it has been since I wrote my last blog post.  I do not think that I can explain everything I have been trough with just one blog post, but slowly I’ll share with you with ups and downs.
However, I can tell you one thing;  it is 2020 and a time we all stay at home. Almost whole world is staying at home.. I am not going to go deep into that because I think we read, listen and breath nothing but “C”. Last couple weeks, maybe months.
Starting from the day before, I decided to shut down my personal algorithm to what’s going on, I do my part and stay at home and also I need to keep my sanity.  Maybe everyone once in a while I’ll follow up the news, but right now this is what I decided.
Well, I have been reading more last couple months. I almost get back to a ritual of reading. I can not tell you how happy I am about that. Because I just realized I had had no patient to read anything any more. I had started watching a lot of youtube videos; movies, news, so when it was time to read, my focus was just not there. That’s why I am so happy this is changing and I am getting back to my ‘normal’. I love reading, I am a dreamer and mind wanderer (I made up with this phrase lol), so I have to read to sense the life.
At the same time, I know  lots of us out there experiencing the same thing, not being able to focus.. So, I don’t want to lose your focus and get back to my recipe. One thing tough; I am truly praying for you to spent your time wisely at home at these days. Read more, learn more, think more, pray more, meditate more and mostly cook your own food, bake for yourself and your loved ones. This is what world needs now.. Wise people with positive vibrations.
And here is my recipe to help you on that.  Making something for yourself and for your family. This is a vegan recipe. You wouldn’t believe how delicious it is. I grew up eating this although it was not vegan. So, I can confidently say that vegan version is way better because it feels lighter. I made this 4-5 times before writing the recipe and we were very happy every single time.

Burcu’s Vegan Poğaca..

“Poğaca, Pogece or Pogacha..” You can find this pastry in any culture around balkans. Usually it has different fillings. I grew up with it. Another recipe that I make when I miss my childhood, or college days that I passed the breakfast with a poğaca that I bought from closest pastry..

Important Notes..
I made this recipe with oat milk yogurt. Oat milk yogurt is my to go yogurt in kitchen these days.. And I used cashew mozzarella cheese . So these two ingredients can replaceable according to what you have at home. Let me know how it goes.
Other nice thing about this recipe you don’t need to wait and rest the dough.. It is ready to bake pretty easy.. One thing tough try not to knead your dough too much.. 2 minutes or so would be enough to get a soft dough to work with.

Ingredients;

  • 1/2 cup olive oil (I use refined&unrefined mixed olive oil so it doesn’t have strong taste but you can use sunflower or canola oil too)
  • 2 handful cups of oat or / almond milk yogurt
  • 1 teaspoon baking powder
  • 1 teaspoon sea salt
  • Approximately 4 cups of all purpose flour + little bit more surface that you would work on
  • black seed for topping (optional but highly recommended!)
  • 1/4 cup oat milk for topping

For Filling;

  • 1 1/2 cup cashew mozzarella cheese
  • 1 teaspoon olive oil
  • 1/4 teaspoon sea salt
  • handful of minced parsley and small dice scallion

Prepping Inside;

Mix the cheese and greens together and add olive oil, set aside

Instructions;

  1. Set your oven for 350 F before starting anything
  2. In a larger mixing bowl; mix yogurt, oil, baking powder and salt,  stir.
  3. Then slowly add your flour to the mix and with your hand start molding the mix to get a dough consistency.
  4. It may require little bit more flour that 4 cup, if so don’t worry.  Slowly add more if it is necessary. The goal is getting soft and not too sticky dough. Roll the dough a big piece of ball. (If working with one piece a dough is too big for your work space cut into two big pieces then roll them into a ball)
  5. Dust the work surface and Transfer the dough to the work surface, lightly dust top with flour.
  6.  Use a rolling pin and roll the dough into thin circle (roughly quarter inch thick).
  7.  Cut small circles from the big circle. You can use large cookie cutter (2 1/2″) to get even pieces.
  8. Once you get your smaller pieces, add a tea spoon of cheese mix on one side and fold it over the cheese mix.
  9. Once you are done with all pieces, brush top of them with oat milk and spread the black seeds on them.
I have an old oven no fan or whatsoever, so it takes 18 to 20 mins for them to be baked. So, when you make it first time check yours every 10 mins and rotate till it gets golden brown.
